Have you been wanting to try a Cucumber Noodles Recipe or better for you meals?

I specifically asked my husband to buy me a Veggetti Spiral Vegetable Slicer for Christmas because I was looking for an easier way to make vegetable noodles and to experiment with new dishes.

So far I have made this recipe for Cucumbers and Zucchini, and it worked out great. (The Veggetti Spiral Vegetable Slicer even separates out the seeds which is super efficient.)

Using the Veggetti to Make Cucumber Noodles

To recreate this Cucumber Noodles Recipe, this is what you will need:

1 Large Cucumber

1 tsp of Olive Oil

1/4 tsp of Dill

1/4 tsp of Onion Powder

1/4 tsp of Salt

Veggetti Seeds come out the side

Directions:

First transform your cucumber into noodles.  Then add the Olive Oil, Dill, Onion Powder, Salt, and combine.

Serve cold immediately. As a side serves 3-4, as an entree 1-2.

It is that easy to make and tastes AWESOME! My kids are actually having this for lunch at school today.

    I made is today & it is OK but I would like to see some garlic &/or onion added. I only used a part of the cucumber with it only being for me & had some difficulity using the veggetti (even though I had received it for a Christmas gift from my hubby). Lesson learned that I need a regular cucumber not an English one. I will be using it more thanks for sharing it has encouraged me to use it..

    I love both cucumber and zucchini noodles. With my cucumber noodles, I typically toss sliced Kalamata olives, grape tomatoes, feta cheese, and salt to taste. Yummy!! For my zucchini noodles, I've experimented with them only 3 ways (so far!). I've used them as a substitute for spaghetti noodles; tossed them sun dried tomatoes, artichoke hearts, olives, and shredded parmesan cheese; and cut up bacon, crisped it in a skillet, and then tossed in the noodles and lightly sauteed with the bacon. Toss on some shredded cheese of your choice, and you've got a scrumptious dish you won't want to share!
  9. I just tried this recipe using onion salt, garlic powder, fresh dill and cumin. It tastes so good. Can't wait to put some feta on it for lunch tomorrow. Thank you for sharing.
