Chipotle Tortilla Appetizers Recipe

Back in September, I had experimented with Tofu when I created a Pumpkin Smoothie Recipe for my kiddos. I truly love their interest in trying new things, and I am back at it again with Chipotle Tortilla Appetizers for game day.

What is really nice about this recipe is it can be made quickly in small batches via the microwave or larger amounts in the oven. I actually got the inspiration for this from a snack that my mother makes with pepperoni. I switched it up though and used Nasoya Tofubaked Chipotle as well as green onions as a garnish.

Chipotle Tortilla Appetizers Ingredients

To create these Chipotle Tortilla Appetizers, check out the ingredients and recipe details below.

What you will need for a large batch: (Serves 4-6 Approximately)

1 Package of Nasoya Tofubaked Chipotle

14-16 Circular Shaped Tortilla Chips

1 Bag of Shredded Sharp Cheddar

1 Bunch of Green Onions

Chipotle Tortilla Appetizers and Ingredients

Directions:

To begin, preheat an oven to 350 degrees.

First lay the tortilla chips out on a cookie sheet lined with parchment paper. Then sprinkle 1 tbsp of Sharp Cheddar on each chip. Next, slice one block of Nasoya Tofubaked Chipotle into 14 – 16 pieces, long ways first and then across.

Then, put a piece Tofu on each of the chips and place this into the oven for 5 minutes.

Finish each chip off with sliced green onion. For a quick snack, you can cook these in the microwave for 10-15 seconds and then top with the onion.

These appetizers make an excellent finger food, are fast to  prepare if you need more, and my 7 and 9 year old gave me the thumbs up on taste. I think I will add olives the next time and see how they turn out!
