My mother makes an Easy Sweet Potato Casserole Recipe with Frosted Corn Flakes, and this year I decided that it would be my contribution to the holiday dishes.

Well it had been a while since I prepared it and after forgetting an ingredient and substituting in something else, I ended up with my own unique version that tastes wonderful. I like it because it is a firmer consistency and I got plenty of compliments at our family dinner.

Easy Sweet Potato Recipe with Frosted Corn Flakes

If you would like to recreate this Easy Sweet Potato Recipe with Frosted Corn Flakes, this is what you will need :

Casserole:

40 Ounce Can of Sweet Potatoes/ Jams  or 2lbs and 8oz.

2 Eggs

1 Cup of White Sugar

1/4 Cup of Unsalted Butter

1/2 Cup of Heavy Whipping Cream

Tsp of Cinnamon

Topping:

1/4 Cup of Unsalted Butter

1/2 Cup of Chopped Pecans

1 Cup of Crushed Frosted Corn Flakes

Directions:

Preheat oven to 350 degrees.

For the Casserole:

Combine the Sweet Potatoes, Eggs, Sugar, Unsalted Butter, Cream, and Cinnamon with a mixer in a bowl. It should be completely combined and in a mashed consistency.

Pour this in a 2 Quart Casserole Dish that has been greased with unsalted butter. Place this in the oven for 15 minutes.

For the topping: 

I ran the Frosted Corn Flakes through a Nut Chopper, (Affiliate Link Example Here Nut Chopper with Non-Skid Base), and then placed it in Zip Bag with the unsalted butter and pecans. I then mashed the bag until the ingredients were combined.

When the timer went off after 15 minutes, this was then spread over the top of the Sweet Potato Mixture and then put back in the oven for an additional 15 more minutes. Depending upon how dark you want your top, you could leave it in a bit longer. As always foods with eggs should reach an internal temperature of 160oF.

I actually made this in advance that morning, and just reheated it in the oven for about 15 minutes at 350 degrees when I got to my parents.
