So my kids and I like smoothies, and because of this I like to try out new combinations and ingredients. A great example of this was when I recently created a Pumpkin Smoothie Recipe made with Tofu.

Now Tofu is something that my family has not been exposed to other than in Miso Soup or maybe in Sushi, so I was interested in looking for alternative ways to incorporate it into our diet.

I experimented with the Nasoya Sesame Ginger TofuBaked in an Asian Salad and my 2 older children raved about it. However since Fall is right around the corner, I have started to crave pumpkin dishes, baked goods, and lots of cinnamon.

It just so happens to still be warm here in Florida so Apple Cider or Warm pumpkin beverages are not really ideal. I thought a Pumpkin Smoothie would be a cool refreshing snack and would also be an awesome way to try out the Nasoya Tofu.

Pumpkin Smoothie Recipe Ingredients

If you would like to recreate this recipe, you will need the following:

Pumpkin Smoothie Recipe Serves 2-3

4 Tbsp of Nasoya Silken Tofu

4 Tbsp of Canned Pumpkin

1 Banana

1 Cup of Sweetened Vanilla Almond Milk

1/4 Tsp of Cinnamon

2 Tsp of Brown Sugar or 1 Tsp of honey (I tried this both ways)

2 Cups of Ice

Directions:

Combine all of these ingredients in a blender. I used the smoothie setting on mine until it was completely mixed. Then serve the Pumpkin Smoothie immediately. FYI, my children loved this smoothie and I have already made it 3 times.

  1. A smoothie with tofu? That's interesting!! About the only time I use tofu is when I'm making Miso soup. I would love to try this though...anything pumpkin! :)

    I 've never incorporated in my meal, but in a smoothie sounds interesting!
  5. I love using tofu in stir frys!
  6. I haven't tried it in a smoothie yet, but I'm going to! A couple of ways - I like adding tofu to scrambled eggs. I like making dishes such as General Tso's Chicken (with tofu instead of chicken) and cut into 'fingers' and batter dip and cover in coconut and saute. I also want to try it in making my own ice cream and creamy salad dressing!!!!!

    I have never cooked with tofu but I do enjoy it fixed at a local vietnamese restaurant in a noodle bowl. I would love to try to recreate that recipe.

    we use tofu to make things when we want to stay vegetarian for a meal or two
  17. I use Tofu in pies, other recipes, and in a breakfast stir-fry with mushrooms, onions,garlic, spinach and Vegg, that tastes like eggs! Think: Amy's Tofu Scramble!! Thank you!!

    I have not tried to add tofu to our meals. This is all new to me.
  19. I use tofu in my stir fries and in a breakfast scramble made with tofu, sweet potato and kale.

    I love Tofu and use it all the time. I use it to make Tofu and cream cheese sandwiches, Tofu nuggets and Tofu loaf.
