The timing was perfect for this recipe since Publix is running their Viva Italia Sale and I was able to pick up most of the ingredients at Buy One Get One Free. Plus, there are Coupons for the sale as well. (available for a limited time).
What is really nice about this Homemade Minestrone recipe is it is meat free and I can recreate it again for Lent. Plus, it is super convenient since I am already stocked up from the sale.
Now before I put the dish together I did mention the items I was contemplating to my hubby and he thought my choices were great. He did recommend omitting sweet peas, and this worked out because the already was including a bunch of veggies. If you would like to try this recipe, details are below!
Homemade Minestrone Serves around 6-8
Ingredients:
1 – 28 oz Can of Hunt’s Petite Diced Tomatoes
1 Can of Progresso Tomato Basil Soup
1 Can of Green Beans
1 Can of Sweet Corn
1 Can of Progresso Cannellini (White Kidney Beans)
1/2 of a 16oz Box of Penne Rigate Pasta (2 Cups uncooked)
1- 6 oz Bag of Baby Spinach
1 Can of Water (I used the Progresso Can)
Directions:
Combine all of the ingredients in a large pot, cover, and place the temperature on the stove at Medium. For the next 10 minutes stir occasionally until the spinach cooks down. Then move the temperature to low and continue to stir occasionally for the next 20-30 minutes.
Once the pasta is tender, it is ready to serve and I suggest topping with 1 to 2 Tablespoons of shredded Parmesan cheese
The consistency of this dish is like that of a stew and can be served as leftovers. However, I think it is best to eat this Homemade Minestrone fresh due the spinach.
