Not too long ago I tried a breakfast dish that had Pico de Gallo on the side. This combination was so good, I decided to make an Avocado and Bacon Egg White Omelette Recipe to try it with, as well as pairing this alongside a great cup of coffee.
I had been in the mood for an Omelette and I figured this would be a wonderful start to my dish. However, before this could happen I would first need to take a trip up to Walmart to get the eggs, cheese, and other ingredients.
While shopping, I visited the Dairy section and picked up a container of International Delight Simply Pure in the Vanilla Flavor. I then stopped by the meats and finished my trip over by produce with fresh vegetables and Cilantro. I also grabbed a couple beautifully colored Anaheim Peppers.
So why International Delight Simply Pure? This delicious creamer includes only 5 simple ingredients and is made with real milk, cream, and sugar. Available in 3 flavors including Vanilla, Hazelnut, and Caramel, Simply Pure makes an excellent addition to coffee while you are getting the kiddos ready for school or simply relaxing alongside a bowl of cereal, or prepared meal.
Once I had all my ingredients and essentials for coffee, I was ready to create a delicious breakfast at home.
Homemade Pico de Gallo Recipe
3 Roma Tomatoes around (1 1/2 Cup)
1 Anaheim Pepper
1/ 2 Cup of Chopped Yellow Onion
2 Tbsp of Chopped Cilantro
2 Tbsp of Oranges Juice
First chop up the tomatoes, onions, and cilantro into small pieces. Then open the Anaheim Pepper, discard the seeds, and chop it as well.
Combine all the ingredients in a bowl with the Orange Juice and store in an airtight container in the fridge. I made this the day before and it lasted for about 3 days in total. (Plus I ate it with chips)
As for the Avocado and Bacon Egg White Omelette Recipe, you will need:
4 Egg Whites
1 Slice of Cooked and Crumbled Turkey Bacon
2 Tbsp of Shredded Parmesan Cheese
2 Tbsp of Ripe Chopped Avocado
1 Tsp of Olive Oil (Optional)
First prepare the bacon and crumble, then slice the avocado. Then separate the Egg Whites from the yokes and lightly whisk for 30 seconds in a bowl.
Next, put the burner to medium heat. Optional: Cover the pan with 1 Tsp of Olive Oil. I do this because although lined, my pan still sticks to eggs.
Then, pour the egg into the pan and cook on one side until it is cooked through and firm, checking occasionally to avoid burning. Then flip the egg over.
Once it is flipped, put the cheese, avocado, and bacon to one side of the omelette and then close it over to form a pouch. Cook this on both sides for 30 seconds to 1 minute until lightly browned and the cheese is melted.

While I cooked, I sipped on my coffee, and when it was time for breakfast I put 3 Tablespoons of Pico de Gallo over my Omelette. It was then time to pour a new cup with International Delight Simply Pure and enjoy my breakfast.
